Ingredients
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1.5 lbs baby potatoes, halved or quartered
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and golden.
- While the potatoes roast, pat the steak bites dry with paper towels. Season them with Italian seasoning, salt, and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer (work in batches if necessary) and sear for 1-2 minutes per side until browned. Remove steak from the skillet and set aside.
- Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant.
- Return the steak bites to the skillet. Add the roasted potatoes. Toss everything together to coat in the garlic butter.
- Cook for another 2-3 minutes, allowing the flavors to meld.
- Stir in the fresh parsley just before serving.
