  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved or quartered
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and golden.
  3. While the potatoes roast, pat the steak bites dry with paper towels. Season them with Italian seasoning, salt, and pepper.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer (work in batches if necessary) and sear for 1-2 minutes per side until browned. Remove steak from the skillet and set aside.
  5. Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant.
  6. Return the steak bites to the skillet. Add the roasted potatoes. Toss everything together to coat in the garlic butter.
  7. Cook for another 2-3 minutes, allowing the flavors to meld.
  8. Stir in the fresh parsley just before serving.

  • For crispier potatoes, ensure they are well-spaced on the baking sheet.
  • You can substitute sirloin with other tender cuts like ribeye or New York strip.
  • Adjust garlic quantity to your preference.
