  • 4 cups whole milk

  • 1 teaspoon pure vanilla extract

Instructions

  1. Combine the rice, whole milk, sugar, and salt in a heavy-bottomed saucepan. This heavy pan helps prevent scorching.
  2. Place the saucepan over medium heat. Stir frequently until the mixture just begins to simmer around the edges.
  3. Reduce the heat to low. You want a very gentle simmer. Cook uncovered for 45 to 60 minutes, stirring every 5 to 7 minutes. Stir more often as the pudding thickens toward the end.
  4. The pudding is done when the rice is tender and the mixture has thickened to a creamy consistency. It should coat the back of a spoon. Remember, it will thicken more as it cools.
  5. Remove the saucepan from the heat. Stir in the vanilla extract.
  6. Serve the rice pudding warm immediately, or transfer it to a bowl, press plastic wrap directly onto the surface to prevent a skin from forming, and chill completely for serving cold later.
  7. When serving, sprinkle the top with extra ground cinnamon.

  • For the creamiest result, use whole milk and stir consistently during the final 20 minutes of cooking.
  • If the pudding becomes too thick upon cooling, stir in a splash of milk or cream until you reach your desired texture.
