Instructions
In a medium bowl, whisk together the dry ingredients: coconut flour, baking powder, and salt.
In a separate bowl, whisk the eggs thoroughly. Add the almond milk and vanilla extract to the eggs and mix well.
Pour the wet ingredients into the dry ingredients. Add the melted coconut oil or butter. Mix until just combined. The batter will be thick; this is normal for coconut flour. Let the batter rest for 5 minutes to allow the flour to absorb the liquid fully.
Heat a non-stick griddle or large skillet over medium-low heat. Lightly grease the surface with coconut oil or butter.
For each pancake, drop about 2 tablespoons of batter onto the hot griddle. Use the back of the spoon to gently spread the batter into a 3-4 inch circle. Do not overwork the batter.
Cook for 3 to 4 minutes on the first side, or until bubbles form on the surface and the edges look set.
Carefully flip the pancakes and cook for another 2 to 3 minutes until golden brown and cooked through.
