  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 (21 ounce) cans cherry pie filling
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Press about two-thirds of the dough evenly into the bottom of the prepared baking pan to form the crust.
  7. Spread the cherry pie filling evenly over the crust.
  8. If using, sprinkle the chopped nuts over the cherry filling.
  9. Crumble the remaining one-third of the dough over the top of the filling to create a streusel topping.
  10. Bake for 40-50 minutes, or until the topping is golden brown and the filling is bubbly.
  11. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For an extra touch of flavor, you can add a pinch of cinnamon to the topping mixture.
  • If you prefer a softer topping, you can reduce the baking time slightly.
  • Ensure the bars are completely cooled before cutting to prevent them from falling apart.
