1 acorn squash
1 tablespoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 cup cooked quinoa
1/2 cup chopped walnuts
1/4 cup dried cranberries
1/4 cup crumbled feta cheese (optional)
1 teaspoon dried sage
1/2 teaspoon dried thyme
Salt and black pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Cut the acorn squash in half lengthwise and scoop out the seeds.
Brush the cut sides of the squash with olive oil and season with salt and pepper.
Place the squash cut-side down on a baking sheet and bake for 30-40 minutes, or until tender.
While the squash is baking, heat the remaining olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
In a bowl, combine the cooked quinoa, sautéed onion and garlic, chopped walnuts, dried cranberries, feta cheese (if using), sage, thyme, salt, and pepper. Mix well.
Once the squash is tender, carefully flip the halves over and fill them with the quinoa mixture.
Return the stuffed squash to the oven and bake for another 10-15 minutes, or until the filling is heated through and the squash is fully cooked.
Serve warm and enjoy your delicious meal!
Notes
You can substitute other nuts like pecans or almonds for walnuts.
For a vegan option, omit the feta cheese or use a vegan alternative.
Other vegetables like sautéed mushrooms or spinach can be added to the filling.
