  • 3 cups cooked day-old white rice
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce (or tamari)
  • 1 teaspoon toasted sesame oil
  • For the Sauce:
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions

  1. Prepare the sauce: In a small bowl, whisk together soy sauce, rice vinegar, grated ginger, honey or maple syrup, and sesame oil. In a separate tiny bowl, mix cornstarch and water to create a slurry. Add the slurry to the sauce mixture and whisk well. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the onions and cook for 2 minutes until softened.
  3. Add the mixed vegetables and minced garlic. Stir fry for 3 minutes until the vegetables are tender-crisp.
  4. Push the vegetables to one side of the pan. Pour the beaten eggs into the empty space. Scramble the eggs until just set, then break them up and mix them with the vegetables.
  5. Add the cooked day-old rice to the pan. Break up any clumps with your spatula. Stir fry for 3 to 4 minutes, allowing the rice to heat through and slightly crisp.
  6. Pour the prepared Sesame Ginger Sauce over the rice mixture. Toss quickly to coat everything evenly. Cook for 1 minute until the sauce thickens slightly.
  7. Stir in the 2 tablespoons of soy sauce and 1 teaspoon of toasted sesame oil. Mix well and serve immediately.

Notes

  • Use cold, day-old rice for the best texture; fresh rice tends to become mushy when stir-fried.
  • Cook the rice mixture over high heat for authentic results, stirring constantly.
  • You can substitute broccoli florets or sliced mushrooms for some of the mixed vegetables.
