Bake a rich, creamy, and satisfying vegan pumpkin pie perfect for holidays. This recipe uses simple ingredients and delivers classic flavor without dairy or eggs.

  • 1 pre-made or homemade vegan pie crust (9-inch)
  • 1 (15-ounce) can pumpkin puree (not pie filling)
  • 1 (12-ounce) can full-fat coconut milk, refrigerated overnight
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Place the pie crust on a baking sheet.
  2. Open the refrigerated can of coconut milk without shaking it. Scoop out only the thick, solid cream from the top layer into a medium bowl. Discard any remaining liquid or use it in another recipe.
  3. In a large bowl, whisk together the pumpkin puree, solid coconut cream, sugar, cornstarch, vanilla extract, pumpkin pie spice, cinnamon, ginger, and salt until completely smooth.
  4. Pour the filling mixture into the unbaked pie crust.
  5. Bake for 50 to 60 minutes, or until the edges are set and the center has only a slight jiggle when gently moved.
  6. Remove the pie from the oven and let it cool completely on a wire rack for at least 3 hours before slicing. Chilling the pie in the refrigerator for an additional hour helps it set firmly.

Notes

  • For a crust made without coconut, use a store-bought vegan crust or make one using vegetable shortening or vegan butter.
  • If you prefer not to use coconut milk, substitute with 1 cup of unsweetened soy milk mixed with 2 tablespoons of cornstarch to help thicken the filling.
  • You can dust the top with extra cinnamon before serving.
