  • 1/4 cup sake
  • 2 tablespoons brown sugar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 4 cups cooked rice
  • 2 cups broccoli florets, steamed
  • 1 cup shredded carrots
  • 1/2 cup sliced red bell pepper
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. In a small saucepan, combine soy sauce, mirin, sake, brown sugar, ginger, and garlic. Bring to a simmer over medium heat, stirring until sugar dissolves. Cook for 5 minutes, then stir in sesame oil. Let cool slightly.
  2. Preheat your broiler or grill.
  3. Place salmon fillets on a baking sheet or grill. Brush generously with teriyaki sauce.
  4. Broil or grill for 8-12 minutes, or until salmon is cooked through and flakes easily with a fork. Baste with more sauce halfway through cooking.
  5. Divide cooked rice among four bowls.
  6. Top each bowl with steamed broccoli, shredded carrots, and sliced red bell pepper.
  7. Place a cooked salmon fillet on top of the vegetables in each bowl.
