1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon soy sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil, divided
1 cup broccoli florets
1 red bell pepper, sliced
1 carrot, julienned
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/4 cup teriyaki sauce
1 tablespoon water
Cooked rice, for serving
Sesame seeds, for garnish (optional)
Instructions
In a medium bowl, toss chicken with soy sauce and cornstarch.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Add the remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, red bell pepper, and carrot. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
Return the chicken to the skillet.
In a small bowl, whisk together teriyaki sauce and water. Pour over chicken and vegetables.
Stir and cook for 1-2 minutes until the sauce has thickened and coats everything.
Serve hot over cooked rice, garnished with sesame seeds if desired.
Notes
For a spicier kick, add a pinch of red pepper flakes with the garlic and ginger.
Feel free to add other vegetables you have on hand, such as snap peas, mushrooms, or onions.
