2 medium sweet potatoes, peeled and diced
1 tablespoon olive oil
1 small red onion, chopped
1 bell pepper (any color), chopped
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt and freshly ground black pepper to taste
4 large eggs
Optional toppings: chopped cilantro, avocado slices, hot sauce
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced sweet potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until they begin to soften.
Add the chopped red onion and bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
Stir in smoked paprika, garlic powder, salt, and pepper. Cook for 1 minute until fragrant.
Create four wells in the hash mixture.
Carefully crack one egg into each well.
Cover the skillet and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your liking.
Serve hot, garnished with optional toppings if desired.
Notes
For crispier sweet potatoes, you can roast them separately before adding them to the skillet.
Feel free to add other vegetables like spinach, mushrooms, or kale.
