Prepare a flavorful Sweet Chili Chicken Bowl featuring tender chicken glazed in a homemade sweet chili sauce, served over rice with a mix of crisp, fresh vegetables.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 cup white rice, cooked
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced red bell pepper
  • 1 cup shredded green cabbage
  • 1/4 cup chopped fresh cilantro for garnish
  • 1 tbsp sesame seeds for garnish
  • For the Sweet Chili Sauce:
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1/4 cup rice vinegar
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tbsp sriracha or chili garlic sauce (adjust to taste)
  • 1 tsp cornstarch mixed with 1 tbsp cold water (slurry)

Instructions

  1. Cook the rice according to package directions. Keep warm.
  2. Prepare the sweet chili sauce: Combine sugar, water, rice vinegar, ketchup, soy sauce, and sriracha in a small saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  3. Whisk the cornstarch slurry into the simmering sauce. Cook for 1 minute until the sauce thickens slightly. Remove from heat and set aside.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes.
  5. Pour half of the prepared sweet chili sauce over the cooked chicken. Toss to coat the chicken evenly and cook for 1 minute until the glaze is sticky. Reserve the remaining sauce for drizzling.
  6. Assemble the bowls: Divide the cooked rice among serving bowls. Top the rice with the glazed sweet chili chicken.
  7. Arrange the shredded carrots, red bell pepper, and cabbage around the chicken.
  8. Drizzle the remaining sweet chili sauce over the vegetables and chicken. Garnish with fresh cilantro and sesame seeds. Serve immediately.

Notes

  • For extra crunch, lightly toast the sesame seeds in a dry pan before using them as a garnish.
  • You can substitute quinoa or brown rice for white rice as the base for this Sweet Chili Chicken Bowl.
  • If you prefer a less sweet sauce, reduce the sugar by 1-2 tablespoons.
