A simple recipe for a large sheet cake version of classic strawberry shortcake, featuring a moist yellow cake base, fresh macerated strawberries, and a light whipped topping.

  • 1 box yellow cake mix (plus ingredients listed on box for cake)
  • 3 quarts fresh strawberries, hulled and sliced
  • 1 cup granulated sugar (for strawberries)
  • 1/4 cup water
  • 2 containers (8 ounces each) frozen whipped topping, thawed
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the cake batter according to the box directions using a standard 13×9 inch baking pan.
  2. Bake the cake as directed on the box. Let the cake cool completely in the pan on a wire rack.
  3. While the cake cools, prepare the strawberries: In a large bowl, combine the sliced strawberries, 1 cup of granulated sugar, and 1/4 cup of water. Gently toss to coat. Let the mixture sit at room temperature for at least 30 minutes to macerate, allowing the juices to release.
  4. Prepare the whipped topping: In a separate bowl, mix the thawed whipped topping with the vanilla extract until smooth.
  5. Once the cake is completely cool, use a fork or skewer to poke holes all over the top surface of the cake, about 1 inch apart. This helps the strawberry juices soak in.
  6. Spoon about half of the strawberry mixture, including the juices, evenly over the poked cake surface.
  7. Spread the vanilla whipped topping evenly over the strawberry layer.
  8. Top the whipped topping with the remaining strawberry mixture and juices.
  9. Chill the cake for at least 1 hour before slicing and serving.

Notes

  • To keep the cake moist, do not overbake the yellow cake base. Check for doneness one minute before the minimum time listed on the box.
  • For a richer flavor, you can substitute the boxed cake mix with your favorite from-scratch yellow cake recipe baked in a 13×9 pan.
  • If you prefer a sturdier topping, use a stabilized whipped cream frosting instead of thawed whipped topping.
