Prepare a satisfying bowl featuring chicken coated in a homemade sticky sweet chili glaze served over rice with crisp-tender vegetables.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1 cup white rice, cooked
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1/4 cup soy sauce
  • 1/4 cup sweet chili sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. Cook the rice according to package directions. Set aside and keep warm.
  2. In a small bowl, whisk together the soy sauce, sweet chili sauce, honey, rice vinegar, ginger, and garlic. This is your glaze base.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  4. Add the broccoli florets and red bell pepper to the same skillet. Stir-fry for 3-4 minutes until they begin to soften slightly but remain crisp. Add the snap peas and cook for 1 more minute.
  5. Return the cooked chicken to the skillet with the vegetables.
  6. Pour the prepared glaze base over the chicken and vegetables. Bring the mixture to a simmer.
  7. Stir the cornstarch slurry once more and pour it slowly into the simmering sauce while stirring constantly. Cook for 1-2 minutes until the sauce thickens and becomes sticky, coating the chicken and vegetables well.
  8. To assemble the bowls, divide the cooked rice among serving bowls. Top with the sticky sweet chili chicken and vegetables.
  9. Garnish each bowl with sliced green onions and sesame seeds before serving.

Notes

  • For extra flavor, you can sear the chicken until slightly crispy before adding the sauce.
  • If you prefer a spicier glaze, add 1/2 teaspoon of sriracha to the glaze base mixture.
  • You can substitute brown rice or quinoa for white rice as your base.
