- 1 pound spaghetti or linguine
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1-2 teaspoons Sriracha or other hot sauce
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 cup hot water (or more, to thin sauce)
- Optional garnishes: chopped peanuts, cilantro, green onions
- Cook spaghetti according to package directions. Reserve about 1/2 cup of the pasta water before draining.
- While the pasta cooks, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, Sriracha, garlic, and ginger in a large bowl.
- Gradually whisk in the hot water until the sauce is smooth and reaches your desired consistency. Add more water a tablespoon at a time if needed.
- Add the drained, hot spaghetti to the bowl with the peanut sauce.
- Toss well to coat the noodles evenly. If the sauce seems too thick, add a little of the reserved pasta water to loosen it.
- Serve immediately, topped with your favorite garnishes.
Notes
- Adjust the Sriracha to control the spice level.
- For a vegan option, use maple syrup instead of honey.
- You can add cooked chicken, shrimp, or tofu for extra protein.
- This dish is also delicious served cold as a noodle salad.
