3 lbs Russet potatoes, peeled and quartered
1 cup chicken broth or water
1 teaspoon salt
1/2 teaspoon black pepper
4 cloves garlic, minced
1/2 cup (1 stick) unsalted butter, cut into pieces
1/2 cup milk or half-and-half
4 ounces cream cheese, softened
1/4 cup sour cream
1/4 cup grated Parmesan cheese (optional)
Instructions
Place the peeled and quartered potatoes into the basin of a 5-quart or larger slow cooker.
Pour the chicken broth or water over the potatoes and sprinkle with salt and pepper.
Add the minced garlic and the pieces of butter on top of the potatoes.
Cover the slow cooker and cook on low for 5 to 6 hours or on high for 2.5 to 3 hours, until the potatoes are fork-tender.
Carefully drain off any excess liquid from the slow cooker.
Add the milk, softened cream cheese, sour cream, and Parmesan cheese (if using) to the potatoes.
Using a potato masher or an electric hand mixer on low speed, mash and mix the ingredients until the potatoes are smooth and creamy. Do not overmix.
Keep warm on the ‘Keep Warm’ setting until ready to serve.
Notes
For make-ahead convenience, you can mash the potatoes, cool them completely, and store them in an airtight container in the refrigerator for up to 3 days. Reheat slowly in the slow cooker on low, adding a splash of milk if they seem dry.
If you prefer a smoother texture, use a potato ricer after cooking instead of mashing in the slow cooker.
For extra richness, substitute heavy cream for the milk.
