2 pounds boneless, skinless chicken breasts or thighs
1 (10.5 ounce) can condensed cream of chicken soup
1 (10.5 ounce) can condensed cream of celery soup
1 cup chicken broth
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon salt
1 cup chopped carrots
1 cup chopped celery
1/2 cup chopped onion
1 (16.3 ounce) can refrigerated biscuit dough
Instructions
Place the chicken breasts or thighs in the bottom of your slow cooker.
In a separate bowl, whisk together the cream of chicken soup, cream of celery soup, chicken broth, thyme, pepper, and salt. Pour this mixture over the chicken.
Add the chopped carrots, celery, and onion around the chicken.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
Remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
Increase the slow cooker setting to high, if necessary. Cut each biscuit into quarters. Drop the biscuit pieces evenly over the top of the chicken mixture, leaving small spaces between them. Do not stir them in.
Cover and cook on high for 30 to 45 minutes, or until the dumplings are puffed and cooked through. Check the bottom of a dumpling to ensure it is done before serving.
Serve immediately.
Notes
For a thicker sauce, mix 2 tablespoons of cornstarch with 3 tablespoons of cold water and stir into the liquid during the last 30 minutes of cooking before adding the biscuits.
You can use frozen mixed vegetables instead of fresh carrots and celery to save prep time.
If your biscuits do not brown on top, you can briefly place them under a preheated broiler for 1 to 2 minutes, watching carefully to prevent burning.
