  • 2 pounds beef chuck roast, trimmed and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1 tablespoon Worcestershire sauce
  • Cooked egg noodles, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Place the beef pieces in your slow cooker.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook until softened, about 5 minutes. Add the sliced mushrooms and minced garlic and cook for another 5 minutes until mushrooms are browned.
  3. Season the beef with salt and pepper. Sprinkle the flour over the beef and toss to coat.
  4. Add the cooked onion, mushroom, and garlic mixture to the slow cooker.
  5. Pour in the condensed cream of mushroom soup and beef broth. Stir to combine.
  6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
  7. About 30 minutes before serving, stir in the sour cream and Worcestershire sauce.
  8. Serve the beef stroganoff over cooked egg noodles. Garnish with fresh parsley.

Notes

  • For extra flavor, you can sear the beef pieces before adding them to the slow cooker.
  • Adjust the amount of sour cream to your preference for creaminess.
  • If you don’t have condensed cream of mushroom soup, you can substitute with 1 cup of heavy cream and 1/2 cup of beef broth with 1 tablespoon of cornstarch to thicken.
