Make fast, flavorful shrimp quesadillas perfect for a weeknight dinner or quick lunch. This recipe delivers tender, seasoned shrimp and perfectly melted cheese inside crispy, restaurant-style tortillas.

  • 1 tablespoon olive oil
  • 1 pound raw shrimp, peeled and deveined
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 8 medium flour tortillas
  • 2 cups shredded Monterey Jack or Mexican blend cheese
  • 1/2 cup chopped onion (optional)
  • 1/4 cup chopped bell pepper (optional)
  • 2 tablespoons butter or extra oil for crisping

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the shrimp, chili powder, cumin, garlic powder, and salt. Cook for 3 to 4 minutes, stirring occasionally, until the shrimp is pink and cooked through. If using, add the onion and bell pepper during the last minute of cooking. Remove the shrimp mixture from the skillet and set aside.
  2. Wipe the skillet clean. Place one tortilla in the skillet over medium heat. Sprinkle about 1/4 cup of cheese over half of the tortilla surface. Top the cheese with about 1/4 cup of the seasoned shrimp mixture.
  3. Fold the empty half of the tortilla over the filling to create a half-moon shape. Cook for 2 to 3 minutes until the bottom is golden brown.
  4. Carefully flip the quesadilla. Add a small pat of butter or a drizzle of oil to the skillet around the edges of the quesadilla. Cook the second side for another 2 to 3 minutes until golden brown and the cheese is fully melted.
  5. Remove the first quesadilla and repeat the process with the remaining tortillas and filling. Slice each quesadilla into wedges before serving.

Notes

  • For restaurant-style crispy tortillas, use a small amount of butter or oil in the pan when cooking the second side. This helps achieve a richer brown color and crisp texture.
  • You can prepare the shrimp filling ahead of time to make assembly even faster.
  • Serve with your favorite toppings like salsa, sour cream, or guacamole.
