A simple, one-pan recipe for Italian sausage, bell peppers, and onions roasted together for a quick weeknight meal with minimal cleanup.

  • 1.5 lbs Italian sausage (sweet or hot), cut into 2-inch pieces
  • 3 large bell peppers (red, yellow, green), cored, seeded, and cut into 1-inch strips
  • 1 large yellow onion, cut into thick wedges
  • 3 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine the sausage pieces, bell pepper strips, and onion wedges.
  3. Drizzle the olive oil over the sausage and vegetables. Sprinkle with Italian seasoning, salt, pepper, and garlic powder, if using. Toss everything together until evenly coated.
  4. Spread the sausage and vegetable mixture in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two pans if necessary for better browning.
  5. Roast for 25 to 30 minutes, stirring halfway through, until the sausage is cooked through and the vegetables are tender and slightly charred.
  6. Remove from the oven and serve immediately.

Notes

  • For extra flavor, toss the vegetables with 1 teaspoon of balsamic vinegar before roasting.
  • You can substitute Italian sausage with smoked sausage or kielbasa. Adjust cooking time if using pre-cooked sausage.
  • Serve this dish over cooked rice, quinoa, or inside crusty rolls for sandwiches.
  • Add other vegetables like zucchini or mushrooms along with the peppers.
