1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 lb broccoli florets
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 red onion, cut into wedges
3 tablespoons olive oil
1 tablespoon dried Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, 1/2 teaspoon Italian seasoning, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, salt, and pepper.
In the same bowl (no need to wash!), add the broccoli, bell peppers, and red onion. Drizzle with the remaining 2 tablespoons of olive oil and sprinkle with the remaining Italian seasoning, garlic powder, and onion powder. Toss to coat the vegetables evenly.
Arrange the seasoned chicken and vegetables in a single layer on a large baking sheet. Ensure there’s some space between the pieces for even cooking.
Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
