Make these Italian sausage stuffed mushrooms with cream cheese and Parmesan for a perfect party appetizer. They bake up beautifully without getting soggy.

  • 1 pound cremini mushrooms, stems removed
  • 1 tablespoon olive oil
  • 1 pound bulk Italian sausage, casings removed
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup plain breadcrumbs (optional, for texture)

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a baking sheet.
  2. Wipe the mushroom caps clean with a damp cloth. If the caps are very large, you can gently scoop out a little extra flesh from the cavity to hold more filling.
  3. Heat the olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. In a medium bowl, combine the cooked sausage, softened cream cheese, 1/2 cup Parmesan cheese, minced garlic, chopped parsley, salt, and pepper. Mix well until everything is fully incorporated. If you want a slightly firmer filling, stir in the breadcrumbs now.
  5. Spoon the sausage mixture evenly into the mushroom caps, mounding the filling slightly.
  6. Place the stuffed mushrooms on the prepared baking sheet. Sprinkle the tops with a little extra Parmesan cheese.
  7. Bake for 20 to 25 minutes, or until the mushrooms are tender and the filling is golden brown. For smaller mushrooms, check at 18 minutes.
  8. Let the garlic herb stuffed mushrooms cool for a few minutes before serving as a holiday appetizer platter favorite.

Notes

  • To make these low-carb, simply omit the breadcrumbs. The filling will still hold together well.
  • You can prepare these make ahead stuffed mushrooms up to 24 hours in advance. Cover the assembled mushrooms and refrigerate. Add about 5 extra minutes to the baking time if baking directly from the refrigerator.
  • For an air fryer stuffed mushrooms variation, arrange them in a single layer in the basket. Cook at 350 degrees F for 10 to 12 minutes, checking for doneness.
  • These bite size party bites hold well on a warming tray for up to an hour if kept covered loosely with foil.
