One-Pot Cheesy Smoked Sausage and Rice Skillet

Make this hearty, flavorful one-pot cheesy smoked sausage and rice skillet for a satisfying weeknight dinner that minimizes cleanup.

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into rounds
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning (or to taste)
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups long-grain white rice, uncooked
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sliced smoked sausage and cook until lightly browned, about 3 to 4 minutes. Remove the sausage with a slotted spoon and set it aside, leaving any rendered fat in the skillet.
  2. Add the chopped onion and bell pepper to the skillet. Cook, stirring occasionally, until the vegetables soften, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the cream of chicken soup, diced tomatoes (with their juice), chicken broth, Cajun seasoning, and dried thyme. Bring the mixture to a simmer.
  4. Stir in the uncooked rice. Return the sausage to the skillet. Cover the skillet tightly, reduce the heat to low, and let it cook for 18 to 20 minutes, or until the rice is tender and all the liquid is absorbed. Do not lift the lid during this time.
  5. Remove the skillet from the heat. Stir in the shredded cheddar cheese until it is completely melted and creamy.
  6. Let the dish stand, covered, for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • For a spicier dish, increase the amount of Cajun seasoning or add a pinch of cayenne pepper with the other spices.
  • You can substitute smoked sausage with your favorite fully cooked sausage, like kielbasa or andouille sausage.
  • If you do not have cream of chicken soup, you can substitute it with 1 cup of heavy cream mixed with 1/2 cup of chicken broth and 1 tablespoon of cornstarch dissolved in cold water to thicken.
