  • For Egg Topping: 1 large egg, 1 teaspoon butter

Instructions

  1. Prepare the ricotta: Place the ricotta cheese in a medium bowl. Add 1 tablespoon of olive oil, salt, and pepper. Whip with a fork or a hand mixer until light and creamy. This creates the base spread.
  2. Toast the bread: Brush one side of each bread slice lightly with olive oil. Toast the bread in a toaster, under a broiler, or in a skillet until golden brown and crisp.
  3. Assemble the Classic Sweet Toast: Spread a generous layer of whipped ricotta onto two slices of toast. Drizzle with honey, top with mixed berries, and sprinkle with chopped pistachios.
  4. Assemble the Savory Tomato Toast: Spread whipped ricotta onto the remaining two slices of toast. Top with halved cherry tomatoes, sprinkle with fresh thyme, and drizzle lightly with extra virgin olive oil.
  5. Assemble the Egg Toast (Optional): Melt butter in a small non-stick skillet over medium heat. Fry one egg to your desired doneness (sunny-side up recommended). Spread whipped ricotta on one slice of toast and carefully place the fried egg on top. Season with salt and pepper.
