1 cup chopped cooked corned beef
1 cup shredded Swiss cheese
1/2 cup sauerkraut, well-drained and squeezed dry
1/2 cup mayonnaise
1/4 cup Thousand Island dressing
1/4 cup cream cheese, softened
1 teaspoon Dijon mustard
1/4 teaspoon caraway seeds (optional)
Rye bread slices or crackers, for serving
Instructions
Prepare your slow cooker by lightly coating the inside with cooking spray or butter.
In a medium bowl, combine the chopped corned beef, Swiss cheese, sauerkraut, mayonnaise, Thousand Island dressing, cream cheese, Dijon mustard, and caraway seeds if you are using them. Mix until all ingredients are just combined.
Transfer the mixture to the prepared slow cooker insert.
Cover and cook on LOW for 1.5 to 2 hours, or on HIGH for 1 hour, stirring halfway through. The dip is ready when it is heated through and the cheese is fully melted and creamy.
Once heated, switch the slow cooker to the WARM setting to keep the dip ready for serving.
Serve the hot Reuben dip directly from the slow cooker with toasted rye bread slices or your favorite crackers for scooping.
Notes
Make sure you squeeze the sauerkraut very dry; excess moisture can make your dip watery.
For a richer flavor, use deli-sliced corned beef and chop it finely.
If you prefer a baked version, combine ingredients in an oven-safe dish and bake at 375°F (190°C) for 20 minutes until bubbly.
