Ingredients
Scale
1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1 cup milk
1/2 cup pumpkin puree
1 large egg
2 tablespoons unsalted butter, melted
Vegetable oil or butter, for greasing
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
In a separate medium bowl, whisk together the milk, pumpkin puree, egg, and melted butter until well combined.
Pour the wet ingredients into the dry ingredients. Stir gently with a whisk until just combined. Do not overmix; a few lumps are okay.
Heat a lightly oiled griddle or non-stick frying pan over medium heat.
Pour about 1/4 cup of batter for each pancake onto the hot griddle.
Cook for 2-3 minutes per side, or until bubbles form on the surface and the edges look set. Flip and cook the other side until golden brown and cooked through.
Serve warm with your favorite toppings like maple syrup, whipped cream, or extra cinnamon.
Notes
For fluffier pancakes, let the batter rest for 5-10 minutes before cooking.
Adjust spices to your preference.
Add a tablespoon of pumpkin seeds for extra crunch.
