1 (15 ounce) can pumpkin puree
1 (15 ounce) can chickpeas, rinsed and drained
1/4 cup tahini
2 tablespoons fresh lemon juice
1 clove garlic, minced
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon smoked paprika, plus more for garnish
2 tablespoons olive oil, plus more for garnish
Pinch of cayenne pepper (optional)
Pita bread, crackers, or fresh vegetables for serving
Instructions
Combine pumpkin puree, chickpeas, tahini, lemon juice, minced garlic, cumin, salt, smoked paprika, and cayenne pepper (if using) in a food processor.
Process until smooth and creamy, scraping down the sides as needed.
With the food processor running, slowly drizzle in the olive oil until fully incorporated.
Taste and adjust seasonings if necessary.
Transfer hummus to a serving bowl. Drizzle with a little extra olive oil and sprinkle with smoked paprika.
Serve with pita bread, crackers, or fresh vegetables.
Notes
For a thicker hummus, use slightly less liquid (lemon juice or olive oil).
You can roast your own pumpkin for a more intense flavor.
Add a pinch of cinnamon or nutmeg for a sweeter twist.
