  • 1 cup plain non-fat Greek yogurt
  • 1/2 cup vanilla whey protein powder
  • 1/4 cup powdered erythritol or preferred sweetener
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 cup crushed graham crackers or low-carb crust alternative (for topping/base)
  • Optional: 1/4 cup mixed berries for topping

Instructions

  1. Drain any excess liquid from the cottage cheese and Greek yogurt if they seem watery. This step helps achieve a thick texture.
  2. Combine the cottage cheese, Greek yogurt, protein powder, sweetener, vanilla extract, and lemon juice in a food processor or high-speed blender.
  3. Blend the mixture until it is completely smooth and creamy. Scrape down the sides as needed to ensure no lumps remain. This is your base for a creamy protein treat.
  4. Divide the crushed graham crackers (or crust alternative) between four small jars or containers, creating a thin base layer in each.
  5. Spoon the cheesecake mixture evenly over the crust layer in the four jars.
  6. Cover the jars and place them in the refrigerator to chill for at least 3 hours, or until firm. This chilling time is essential for texture.
  7. Before serving, top each jar with a few fresh berries or a sprinkle of the remaining crust material.

  • For a chocolate protein cheesecake, substitute 1/4 cup of the vanilla protein powder with chocolate protein powder.
