Make these simple pizza muffins for a fun, bite-sized snack perfect for lunchboxes or parties. They freeze well for quick meals.

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate bowl, whisk the egg, milk, and vegetable oil until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the pizza sauce, mozzarella cheese, and chopped pepperoni.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Sprinkle the tops of the muffins with the Parmesan cheese.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the pizza muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These lunchbox pizza bites freeze well. Cool completely, then place them in a freezer-safe bag. Reheat in the microwave or toaster oven.
  • You can substitute the pepperoni with cooked, crumbled sausage or finely chopped bell peppers for variety.
  • For extra flavor, brush the tops with a little melted garlic butter before serving.
