Chewy Peanut Butter Rice Krispie Treats with Chocolate Drizzle

Make these easy, no-bake peanut butter Rice Krispie treats for a chewy, gooey snack. This recipe includes an optional chocolate topping.

  • 6 cups puffed rice cereal
  • 1 (10 ounce) package marshmallows
  • 1/2 cup creamy peanut butter
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips (for drizzle)
  • 1 tablespoon coconut oil (for drizzle)

Instructions

  1. Lightly grease a 9×13 inch baking pan or line it with parchment paper, leaving an overhang for easy removal.
  2. In a large saucepan, melt the butter over low heat.
  3. Add the marshmallows to the melted butter. Stir constantly until the marshmallows are completely melted and smooth. Remove the pan from the heat.
  4. Stir in the peanut butter and vanilla extract until fully combined into the marshmallow mixture.
  5. Quickly add the puffed rice cereal to the marshmallow mixture. Fold gently until the cereal is evenly coated. Do not overmix.
  6. Press the mixture evenly into the prepared baking pan. Use a piece of wax paper or lightly buttered spatula to press it down without sticking. Let it cool for 15 minutes.
  7. To make the drizzle, combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth.
  8. Drizzle the melted chocolate over the cooled cereal bars.
  9. Allow the chocolate to set completely before cutting into squares.

Notes

  • For extra chewy treats, use fresh marshmallows. Older marshmallows result in a firmer bar.
  • If you prefer a thicker bar, use a 9×9 inch pan instead of a 9×13 inch pan. Adjust cooking time slightly if needed.
  • Store leftovers in an airtight container at room temperature for up to three days.
