1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 cup chicken broth
1/2 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces uncooked fettuccine pasta
1/2 cup grated Parmesan cheese
Fresh basil, chopped, for garnish
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add chicken pieces and cook until browned on all sides. Remove chicken from the pot and set aside.
Add chopped onion to the pot and cook until softened, about 5 minutes.
Stir in minced garlic and cook for 1 minute more until fragrant.
Pour in diced tomatoes (with juice) and chicken broth. Bring to a simmer.
Stir in heavy cream, sun-dried tomatoes, Italian seasoning, salt, and pepper.
Add the uncooked fettuccine to the pot. Ensure pasta is submerged in the liquid.
Bring the mixture back to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
Return the cooked chicken to the pot. Stir in Parmesan cheese until melted and the sauce is creamy.
Garnish with fresh basil before serving.
Notes
For a spicier dish, add a pinch of red pepper flakes with the garlic.
You can substitute chicken thighs for chicken breasts.
If the sauce is too thick, add a little more chicken broth or water.
