1 tablespoon olive oil
1 pound cremini mushrooms, sliced
4 cloves garlic, minced
1 small yellow onion, chopped
1 1/2 cups orzo pasta
4 cups vegetable broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon fresh thyme leaves
Salt and black pepper to taste
Instructions
Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.
Add the sliced mushrooms and cook until they release their liquid and start to brown, about 8 minutes.
Add the chopped onion and cook until softened, about 3 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the orzo pasta to the pot and toast for 1 minute, stirring constantly.
Pour in the vegetable broth. Bring the mixture to a simmer, then reduce the heat to medium-low.
Cook, stirring frequently to prevent sticking, until the orzo is tender and most of the liquid is absorbed, about 12 to 15 minutes.
Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy.
Stir in the fresh thyme leaves, salt, and pepper. Serve immediately.
Notes
If the orzo seems too thick before it is fully cooked, add a splash more broth or water.
You can substitute dried thyme for fresh, using 1/3 teaspoon.
For a richer flavor, use chicken broth instead of vegetable broth.
