1 tablespoon olive oil
1 pound smoked sausage (like Andouille), sliced
1 medium onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 teaspoon Cajun seasoning (or more to taste)
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
12 ounces dry pasta (penne or rotini work well)
3 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese

Instructions
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced sausage and cook until lightly browned, about 3 to 4 minutes. Remove the sausage and set it aside, leaving any rendered fat in the pot.
Add the chopped onion and bell pepper to the pot. Cook until softened, about 5 minutes.
Stir in the minced garlic, Cajun seasoning, paprika, and cayenne pepper. Cook for 1 minute until fragrant.
Add the dry pasta and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 12 to 15 minutes, stirring occasionally to prevent sticking, until the pasta is nearly tender.
Uncover the pot. Stir in the heavy cream and the cooked sausage. Continue to cook, stirring constantly, until the sauce thickens slightly, about 2 to 3 minutes.
Remove the pot from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
Taste the pasta and add salt and pepper if needed. Serve immediately.
Notes
If you do not have pre-made Cajun seasoning, combine 1/2 teaspoon paprika, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/8 teaspoon dried thyme, and a pinch of dried oregano for a quick blend.
For extra heat, add a dash of hot sauce when finishing the dish.
If the sauce seems too thick after adding the cream, add a splash more chicken broth or milk until you reach your desired consistency.
