Cook tender beef, crisp broccoli, and savory ramen noodles all in a single pot for a fast weeknight dinner with minimal cleanup.

  • 8 oz thinly sliced flank steak or sirloin
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 head broccoli, cut into small florets
  • 4 cups beef broth
  • 2 (3 ounce) packages instant ramen noodles (discard seasoning packets)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Season the sliced beef lightly with salt and pepper.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook until browned, about 2-3 minutes. Remove the beef from the pot and set it aside.
  3. Add the minced garlic and grated ginger to the same pot and cook for 30 seconds until fragrant.
  4. Add the broccoli florets and beef broth to the pot. Bring the mixture to a boil.
  5. Once boiling, add the ramen noodles, soy sauce, and brown sugar. Cook, stirring occasionally, until the noodles begin to soften, about 3 minutes.
  6. Return the cooked beef to the pot. Stir in the sesame oil.
  7. Pour the cornstarch slurry into the pot while stirring constantly. Cook for 1 minute until the sauce thickens slightly.
  8. Serve immediately from the pot.

Notes

  • You can substitute chicken or vegetable broth for beef broth if preferred.
  • For extra flavor, add a dash of rice vinegar when you add the soy sauce.
  • Cut the steak against the grain for the most tender results.
