1 cup rolled oats
1 cup creamy peanut butter
1/2 cup powdered sugar
1/2 cup unsalted butter, melted
1 cup semi-sweet chocolate chips
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a large bowl, combine the rolled oats, peanut butter, powdered sugar, and melted butter. Mix until everything is evenly incorporated and forms a thick dough.
Press the mixture firmly and evenly into the prepared pan. Use the bottom of a glass or measuring cup to compact the base layer.
Place the chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until the chocolate is smooth and fully melted.
Pour the melted chocolate over the oat base. Spread the chocolate evenly across the top layer.
Refrigerate the bars for at least 1 hour, or freeze for 30 minutes, until the chocolate topping is firm.
Use the parchment paper overhang to lift the bars from the pan. Cut into 16 squares.
Notes
For firmer bars, store leftovers in an airtight container in the refrigerator or freezer.
You can substitute quick oats for rolled oats, but the texture will be softer.
If you prefer a thinner chocolate layer, reduce the chocolate chips to 3/4 cup.
