Ingredients
Scale
3 large ripe bananas
12 ounces semi-sweet chocolate chips or chopped chocolate
1 tablespoon coconut oil (optional, for smoother dipping)
2 tablespoons chopped nuts or sprinkles (optional topping)
Instructions
Peel the bananas and slice each into 1-inch thick rounds. You should get about 30-36 slices.
Place the banana slices in a single layer on a baking sheet lined with parchment paper.
Freeze the banana slices for at least 2 hours, or until completely solid.
In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted.
Remove the frozen banana slices from the freezer. Working quickly, dip each banana slice into the melted chocolate, ensuring it is fully coated. You can use a fork or toothpicks to hold them.
Immediately place the coated bites back onto the parchment-lined baking sheet.
If using toppings, sprinkle the chopped nuts or sprinkles over the chocolate before it sets.
Return the baking sheet to the freezer for at least 30 minutes to allow the chocolate coating to harden completely.
Transfer the hardened bites to an airtight container for storage in the freezer.
Notes
Use bananas that are firm but ripe for the best flavor and texture. Overripe bananas become too mushy when frozen.
If you do not have coconut oil, you can use 1 teaspoon of vegetable shortening or skip the added fat, though the chocolate may set slightly thicker.
Store these bites in the freezer. They are best eaten directly from the freezer.
