1 cup oat bran
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 large egg
1 cup buttermilk
1/2 cup unsweetened applesauce
1/4 cup honey or maple syrup (natural sweetener)
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup raisins or chopped apple (optional addition)
Instructions
Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, combine the wheat bran, oat bran, whole wheat flour, baking soda, baking powder, cinnamon, and salt. Whisk these dry ingredients together thoroughly.
In a separate medium bowl, whisk together the egg, buttermilk, applesauce, honey or maple syrup, vegetable oil, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients. Mix only until just combined. Do not overmix; a few lumps are fine for a moist texture.
If using, gently fold in the raisins or chopped apple.
Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
