Create adorable mini apple pies that are perfect for any occasion. These handheld treats offer a delightful balance of sweet apples and flaky pastry.

  • 1 box refrigerated pie crusts (2 count)
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 6 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine granulated sugar, brown sugar, flour, cinnamon, nutmeg, and allspice.
  3. Add the diced apples to the sugar mixture and toss to coat evenly.
  4. Unroll the pie crusts. Using a round cutter (about 4-5 inches in diameter), cut out circles from the crusts. You should get about 4-5 circles per crust.
  5. Gently press the crust circles into the cups of a standard muffin tin.
  6. Spoon the apple filling into each mini crust-lined muffin cup.
  7. Dot the top of the apple filling with the small pieces of butter.
  8. Place a second crust circle on top of the filling in each muffin cup. Crimp the edges with your fingers or a fork to seal. You can also cut small vents in the top crust.
  9. Brush the tops of the mini pies with the beaten egg wash.
  10. Sprinkle the coarse sugar over the egg wash.
  11. Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
  12. Let the mini pies cool in the muffin tin for about 10 minutes before carefully removing them to a wire rack to cool completely.

Notes

  • For a richer flavor, you can add a tablespoon of lemon juice to the apple filling.
  • If you don’t have a muffin tin, you can bake these on a baking sheet.
  • Serve warm or at room temperature.
  • These mini pies can be stored in an airtight container at room temperature for up to 2 days.
