1 package (1 lb) phyllo dough, thawed
4 tablespoons unsalted butter, melted
1 tablespoon olive oil
1 small yellow onion, finely chopped
10 ounces fresh spinach, washed and roughly chopped
8 ounces crumbled feta cheese
1 large egg, lightly beaten
1 teaspoon dried dill
1/2 teaspoon lemon zest
1/4 teaspoon black pepper
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
In a skillet over medium heat, combine the olive oil and chopped onion. Cook until softened, about 4 minutes.
Add the chopped spinach to the skillet. Cook until the spinach wilts completely and all excess moisture has evaporated. Remove from heat and let cool slightly.
In a medium bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten egg, dried dill, lemon zest, and black pepper. Mix gently until just combined. This is your filling.
Lay one sheet of phyllo dough flat on a clean, dry surface. Brush the entire surface lightly with melted butter. Place a second sheet directly on top of the first. Brush the second sheet with butter. Repeat this process until you have a stack of four buttered phyllo sheets.
Cut the stacked phyllo sheets lengthwise into three equal strips.
Place about 1 tablespoon of the spinach and feta filling near one end of a strip. Fold the corner of the strip over the filling to form a triangle shape. Continue folding the strip like a flag, keeping the filling enclosed, until you reach the end of the strip.
Place the finished triangle, seam-side down, on the prepared baking sheet. Brush the top lightly with any remaining melted butter.
Repeat the filling and folding process with the remaining phyllo sheets and filling to create more crispy Mediterranean bites.
Bake for 15 to 18 minutes, or until the crisps are golden brown and flaky. Serve warm.
Notes
For extra crispness, you can brush the tops of the crisps with a mixture of 1 egg yolk and 1 teaspoon of water before baking.
These are excellent served with a side of plain Greek yogurt mixed with a little lemon juice for dipping.
If you prefer a richer flavor, substitute half of the butter with olive oil when brushing the phyllo layers.
