Make this fresh, simple salad featuring crisp cucumber and ripe tomatoes tossed in a bright lemon and oregano dressing. It is a quick, healthy side dish perfect for any meal.

Ingredients

  • 2 large cucumbers, chopped
  • 3 medium ripe tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and chop the cucumbers and tomatoes into bite-sized pieces. Place them in a large bowl.
  2. Add the thinly sliced red onion and chopped fresh parsley to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to create the vinaigrette.
  4. Pour the vinaigrette over the vegetables. Toss gently to coat everything evenly.
  5. If using, sprinkle the crumbled feta cheese over the salad.
  6. Serve immediately or chill for 15 minutes to allow the flavors to meld.

Notes

  • For a crunchier texture, peel the cucumber before chopping.
  • If you prefer a milder onion flavor, soak the sliced red onion in cold water for 10 minutes, then drain well before adding to the salad.
