Ingredients
Scale
1/4 cup low sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1 teaspoon brown sugar
1/2 teaspoon black pepper
Instructions
In a medium bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, brown sugar, and black pepper until the sugar dissolves. This creates your flavorful tuna steak coating.
Place your tuna steaks in a resealable plastic bag or a shallow dish.
Pour the marinade over the tuna steaks, ensuring they are fully coated.
Seal the bag or cover the dish. Marinate the tuna steak in the refrigerator for 20 to 30 minutes. Do not marinate for longer than 30 minutes, as the acid in the vinegar can begin to ‘cook’ the fish.
Remove the tuna steaks from the marinade. Discard the remaining marinade. Pat the steaks dry with paper towels before cooking. This step is key for achieving a perfect sear.
Cook the tuna steak immediately using your preferred method, such as grilling or searing.
Notes
For a Japanese style tuna marinade flavor, add a teaspoon of mirin to the mixture.
If you are planning to grill your tuna steak, consider using this marinade as a basting liquid during the last minute of cooking, but do not reuse the marinade that touched the raw fish.
This recipe works well as a quick tuna steak marinade for weeknight meals.
