Create irresistible loaded potato skins that are crispy on the outside and fluffy on the inside, loaded with cheese and bacon for a perfect appetizer.

Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly. Prick each potato several times with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for 45-60 minutes, or until tender when pierced with a fork.
  5. Let the potatoes cool slightly until they are easy to handle.
  6. Cut each potato in half lengthwise.
  7. Scoop out most of the flesh, leaving about a 1/4-inch shell. You can save the potato flesh for another use.
  8. Place the potato shells cut-side up on a baking sheet.
  9. Bake the shells for another 10-15 minutes, or until they are lightly golden and crispy.
  10. Fill each potato shell generously with crumbled bacon and shredded cheddar cheese.
  11. Return the baking sheet to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  12. Top the loaded potato skins with a dollop of sour cream and a sprinkle of fresh chives before serving.

Notes

  • For extra crispy skins, you can scoop out a bit more potato flesh.
  • Feel free to add other toppings like green onions, jalapeƱos, or a different type of cheese.
  • Ensure the bacon is cooked until crispy before crumbling.
