A simple recipe for making flavorful, juicy chicken thighs with crispy skin using lemon and garlic.

  • 6 bone-in, skin-on chicken thighs
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Pat the chicken thighs dry thoroughly with paper towels. This helps achieve crispy skin.
  3. In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, pepper, and red pepper flakes if you are using them.
  4. Place the chicken thighs in a large bowl or a sealable plastic bag. Pour the marinade over the chicken and toss to coat evenly. Let the chicken marinate for at least 15 minutes, or up to 4 hours in the refrigerator.
  5. Arrange the marinated chicken thighs skin-side up on a baking sheet lined with parchment paper or a wire rack set over a baking sheet. Do not overcrowd the pan.
  6. Roast for 35 to 45 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is golden brown and crisp.
  7. Let the chicken rest for 5 minutes before serving.

Notes

  • For a one-pan meal, add 1 pound of chopped root vegetables like potatoes or carrots to the baking sheet around the chicken during the last 30 minutes of cooking.
  • If you prefer extra crispy skin, you can place the chicken under the broiler for the last 1 to 2 minutes, watching carefully to prevent burning.
  • Use fresh lemon juice for the best flavor.
