Lemon Blueberry Focaccia is a delightful twist on classic focaccia bread. It’s soft, airy, and bursting with the bright flavors of lemon and sweet blueberries. Perfect for a special breakfast, brunch, or a lovely snack.

  • 2 ¼ teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 1 ½ cups warm water (105-115°F)
  • 3 ½ cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • ½ cup olive oil, plus more for greasing
  • Zest of 1 lemon
  • ½ cup fresh blueberries
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. In a small bowl, combine the yeast, sugar, and warm water. Let it sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together the flour and salt.
  3. Pour the yeast mixture and ½ cup olive oil into the flour mixture. Mix until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Lightly grease a clean bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Grease a 9×13 inch baking pan with olive oil.
  7. Gently punch down the dough and transfer it to the prepared baking pan.
  8. Using your fingers, gently stretch and press the dough to fill the pan. Dimple the surface of the dough with your fingertips.
  9. Drizzle with a little more olive oil and sprinkle the lemon zest and blueberries evenly over the dough. If using, sprinkle with coarse sugar.
  10. Cover the pan loosely with plastic wrap and let it rest for another 30 minutes.
  11. Preheat your oven to 400°F (200°C).
  12. Bake for 20-25 minutes, or until golden brown and cooked through.
  13. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

  • Ensure your warm water is not too hot, as it can kill the yeast.
  • The dough will be sticky, which is normal for focaccia. Use lightly floured hands or a bench scraper to handle it.
  • For a stronger lemon flavor, you can add a tablespoon of lemon juice to the dough.
  • You can substitute frozen blueberries for fresh, but toss them with a tablespoon of flour before adding to prevent them from bleeding too much.
