Make a creamy, low-carb smoothie that tastes like strawberry cheesecake using keto-friendly ingredients.

Ingredients

  • 1 cup frozen strawberries
  • 4 oz cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/2 cup unsweetened almond milk
  • 1 scoop unflavored collagen peptides or whey protein (optional)
  • 2 tablespoons erythritol or monk fruit sweetener (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon lemon juice
  • 4 ice cubes

Instructions

  1. Place the softened cream cheese, heavy cream, almond milk, frozen strawberries, protein powder (if using), sweetener, vanilla extract, and lemon juice into a high-speed blender.
  2. Add the ice cubes last.
  3. Blend on high until the mixture is completely smooth and thick. Stop and scrape down the sides if necessary.
  4. Taste the smoothie and add more sweetener if desired.
  5. Pour immediately into a glass and serve.

Notes

  • For an extra thick smoothie, use less almond milk or add 1/4 of a small avocado for healthy fats and texture.
  • If you do not have frozen strawberries, use fresh strawberries and add 1/2 cup more ice.
  • Use a keto-approved sweetener that dissolves well to avoid grittiness.
