A rich, creamy, and low-carb version of Chicken Alfredo using zucchini noodles instead of traditional pasta. This recipe focuses on high fat content for strict ketogenic diets.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil or butter
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)
  • 3 medium zucchini, spiralized into noodles (zoodles)

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil or butter in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the 4 tablespoons of butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  4. Pour in the heavy cream. Bring the mixture to a gentle simmer, stirring occasionally. Let it simmer for 2 to 3 minutes until it starts to thicken slightly.
  5. Remove the skillet from the heat. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Stir in the salt, pepper, and nutmeg, if using.
  6. Return the cooked chicken to the skillet and toss to coat it completely in the Alfredo sauce. Keep warm over very low heat if necessary, but avoid boiling the sauce once the cheese is added.
  7. Prepare the zucchini noodles. You can lightly sauté them in a separate pan with a little butter for 1-2 minutes to soften them slightly, or serve them raw for a firmer texture. Do not overcook the zoodles, as they release water quickly.
  8. Divide the zucchini noodles among serving plates. Top generously with the creamy chicken Alfredo sauce. Sprinkle with extra Parmesan cheese before serving.

Notes

  • For a richer sauce, use high-quality, full-fat heavy cream.
  • If you prefer a thicker sauce without adding carbs, you can let the cream simmer longer, or whisk in 1/2 teaspoon of xanthan gum once the sauce is off the heat, stirring rapidly.
  • Shirataki noodles or cooked egg noodles are good low-carb pasta alternatives if you avoid zucchini.
