1.5 lbs flank steak or sirloin, thinly sliced against the grain
1 tablespoon vegetable oil
1 cup beef broth
1/2 cup soy sauce (low sodium preferred)
1/4 cup brown sugar
2 tablespoons rice vinegar
1 tablespoon fresh ginger, minced
3 cloves garlic, minced
1 teaspoon sesame oil
1/2 teaspoon ground black pepper
1 large head of broccoli (about 4 cups florets)
3 tablespoons cornstarch
3 tablespoons cold water
Instructions
Slice the beef thinly against the grain. Pat the slices dry with paper towels.
Set the Instant Pot to the Sauté function (Normal setting). Add vegetable oil. When hot, sear the beef in batches until lightly browned on the edges. Do not overcrowd the pot. Remove the beef and set aside.
Pour the beef broth into the pot and scrape up any browned bits from the bottom. This prevents a burn notice.
Add the soy sauce, brown sugar, rice vinegar, ginger, garlic, sesame oil, and black pepper to the pot. Stir well.
Return the seared beef to the pot. Secure the lid and set the vent to Sealing.
Cook on High Pressure for 3 minutes.
When the cooking cycle finishes, perform a Quick Release (QR) of the pressure.
Remove the beef using a slotted spoon and set aside. Leave the liquid in the pot.
Set the Instant Pot to the Sauté function (Low setting).
In a small bowl, whisk together the cornstarch and cold water to create a slurry.
Slowly whisk the slurry into the simmering liquid in the pot. Stir constantly until the sauce thickens, about 1 to 2 minutes.
Add the broccoli florets to the thickened sauce. Cook, stirring occasionally, until the broccoli is bright green and tender-crisp, about 3 to 4 minutes.
Return the beef to the pot and stir to coat everything in the sauce. Serve immediately over rice.
Notes
For the best texture, slice the beef after partially freezing it for 30 minutes.
Do not add the broccoli before pressure cooking; it will become mushy. Add it after the pressure release.
If you prefer a thicker sauce, use 4 tablespoons of cornstarch instead of 3.
