4 black tea bags (or 2 tablespoons loose leaf)
1 cup fresh strawberries, hulled and sliced
1/2 cup granulated sugar
1/2 cup fresh lemon juice
1 cup cold water (for dilution)
Ice cubes
Lemon slices and extra strawberries for garnish
Instructions
Make the simple syrup: Combine 1 cup of water and the sugar in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool slightly.
Prepare the strawberry infusion: Place the sliced strawberries and the warm simple syrup into a bowl. Gently mash the strawberries with a fork or muddler to release their juices. Let this mixture steep for 15 minutes.
Brew the tea: Bring 4 cups of water to a boil. Remove from heat, add the tea bags, and steep for 4 to 5 minutes for black tea. Remove the tea bags.
Combine ingredients: Strain the strawberry syrup mixture through a fine-mesh sieve into a large pitcher, pressing down on the solids to extract all the liquid. Discard the solids.
Mix the tea: Pour the hot brewed tea into the pitcher with the strawberry syrup. Stir well.
Add lemon and dilute: Stir in the fresh lemon juice and 1 cup of cold water. Taste and adjust sweetness or tartness if needed.
Chill: Refrigerate the tea mixture until completely cold, at least 1 hour.
Serve: Fill glasses with ice. Pour the chilled tea over the ice. Garnish each glass with a lemon slice and a fresh strawberry.
Notes
For a clearer tea, avoid over-steeping the tea bags.
If you prefer a stronger fruit flavor, you can blend the strawberries with the simple syrup and strain the puree.
Substitute half the still water with sparkling water just before serving for a fizzy drink.
