Make a refreshing Iced Lavender Latte at home using a simple homemade lavender syrup. This recipe balances floral notes with strong coffee.

  • 1 cup water
  • 1 cup granulated sugar
  • 2 tablespoons dried culinary lavender buds
  • 1/2 cup strong brewed espresso or cold brew concentrate
  • 1 cup milk (dairy or non-dairy)
  • Ice cubes
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. Make the syrup: Combine water, sugar, and dried lavender buds in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Do not boil.
  2. Remove the syrup from the heat. Let the lavender steep in the hot syrup for 30 minutes. This prevents a soapy taste.
  3. Strain the syrup through a fine-mesh sieve into a clean jar, discarding the lavender buds. Stir in vanilla extract if using. Let the syrup cool completely.
  4. Prepare your coffee: Brew espresso or strong cold brew concentrate. Let it cool slightly.
  5. Assemble the latte: Fill a tall glass with ice cubes.
  6. Add 2 to 3 tablespoons of the cooled lavender syrup to the glass, adjusting to your taste preference.
  7. Pour the cooled coffee over the syrup and ice.
  8. Top with 1 cup of your chosen milk. Stir gently before drinking.

Notes

  • For a stronger lavender flavor without over-steeping, use 1 tablespoon of buds and steep for 45 minutes.
  • Oat milk or whole milk works well for a creamy texture.
  • If you prefer a less intense floral flavor, use half the amount of syrup and add a small splash of simple syrup for sweetness.
