Make sticky and crispy chicken wings coated in a balanced sweet and spicy honey Sriracha glaze using a two-step cooking method.

  • 2 lbs chicken wing sections (flats and drumettes)
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup honey
  • 1/4 cup Sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with a wire rack set over it.
  2. Pat the chicken wings completely dry using paper towels. This is key for crispiness.
  3. In a large bowl, toss the dry wings with baking powder, salt, and pepper until evenly coated.
  4. Arrange the wings in a single layer on the prepared wire rack. Do not overcrowd the pan.
  5. Bake for 25 minutes. Flip the wings over and bake for another 15 to 20 minutes, until the skin is very crispy and golden brown.
  6. While the wings finish cooking, prepare the sauce. Combine honey, Sriracha, soy sauce, rice vinegar, garlic powder, and ginger in a small saucepan.
  7. Heat the sauce mixture over medium heat, stirring constantly, until it simmers and thickens slightly, about 3 to 5 minutes. Remove from heat.
  8. Transfer the hot, crispy wings to a large, clean bowl. Pour the warm sauce over the wings.
  9. Toss quickly and thoroughly until every wing is fully coated in the sticky glaze. Serve immediately to maintain maximum crispiness.

Notes

  • For extra crispiness, you can use an air fryer set to 380°F (195°C) for 18-20 minutes, flipping halfway.
  • If you prefer a thicker sauce, simmer it for a few extra minutes until it coats the back of a spoon.
  • Garnish with sesame seeds or sliced green onions before serving.
